I just recently wrote about a refreshing beverage moment in my life and here’s yet another! It’s just been so hot and humid that these little cups of joy have been a perfect way to stay cool, creative and to treat ourselves to something new during these last long hot summer days.
Refreshing and bright this one was instantly toddler approved. My little Everett (2.5) kept coming back for more “drink”.
If we’re drinking juice around here it’s usually fresh pressed or juiced just prior to drinking so we had a “special treat” sipping these together on the kitchen floor as I tried to find some natural light for a decent photo.
He’s a great taste tester and is generally interested in trying almost anything I’m working on especially if it involves chocolate or looks like cake of any kind – ha!
Iced Pineapple Almond and Lime Beverage
I used an electric juicer to juice one whole pineapple which yielded about a cup of fresh juice.
- Fill a glass with ice.
- Pour in about 2 ounces of fresh pineapple juice.
- Fill almost to the top with sparkling water and then finish it off with a splash of almond milk, a generous squeeze of lime and a fresh sprig of cilantro or mint.
